An “ability card with a single target” is one that had a single target as it was added to the chain. As Spell Ricochet resolves, choose such a card on the chain, and you may change its target to any other legal target (reading that card’s target description from its controller’s perspective, so “opposing” continues to mean
opposed to that player, and so on).
